Centuries and centuries of experience corroborate that the water from the San Bernardo spring is beneficial both for people and for the fields and their fruit.

As early as the 12th century, the Cistercian monks resorted to an aquifer at a depth of 386 metres to capture mineral-medicinal waters and thus irrigate the vineyards that today form part of the Ribera del Duero DO.
